Transform pizza night with this colorful, nutritious twist. This Rainbow Veggie Pizza is a delightful way to incorporate an array of vegetables into a traditionally crowd-pleasing meal. It's an engaging dish that invites kids to explore the flavors and benefits of different veggies, all arranged beautifully to mimic a rainbow.

Ingredients

  • 1 whole wheat pizza dough (store-bought or homemade)
  • ½ cup tomato sauce
  • 2 cups shredded mozzarella cheese
  • Red bell peppers, thinly sliced
  • Carrot ribbons (use a peeler to create thin strips)
  • Corn kernels (fresh or frozen and thawed)
  • Broccoli florets, blanched and chopped
  • Purple onions, thinly sliced
  • A handful of spinach leaves for a touch of green

Preparation

  • Start by heating your oven to 425°F (220°C), ensuring it's hot enough to crisp the dough and melt the cheese beautifully.
  • On a floured surface, roll out your whole wheat pizza dough into a 12-inch circle. Transfer it to a baking sheet lined with parchment paper for easy cleanup.
  • Spread the tomato sauce evenly over the dough, leaving about an inch of the edge sauce-free for the crust. Sprinkle 1 ½ cups of mozzarella cheese over the sauce.
  • Now it’s time to arrange your veggies. Using the various colors of the vegetables, you will create a gradient effect that resembles a rainbow. Start with the red bell peppers at the outer edge, followed by carrot ribbons, corn kernels, broccoli florets, spinach leaves, and finally, purple onions in the center.
  • Slide the pizza into the oven and bake for 15-18 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
  • Once out of the oven, let the pizza cool for a few minutes. This is a great time to add any fresh herbs you like, such as basil or oregano, for an extra flavor boost.

Presentation Tip:

Cut the pizza into slices and serve on an Ahimsa rainbow plate. The colorful vegetables against the plate's vibrant hues make the meal visually stunning, turning a simple pizza into an exciting adventure in taste and color. It's a fantastic way to make healthy eating appealing and fun for kids, encouraging them to try a rainbow of vegetables in one go.

Frequently Asked Questions

Why should I use stainless steel instead of plastic? Is stainless steel better for health?

The American Academy of Pediatrics (AAP) released a report in July 2018 suggesting ways that families can limit exposure to certain chemicals at mealtime, including “the use of alternatives to plastic, such as glass or stainless steel, when possible.” The report explained that “…some additives are put directly in foods, while “indirect” additives may include chemicals from plastic, glues, dyes, paper, cardboard”. Further, “Children are more sensitive to chemical exposures because they eat and drink more, relative to body weight, than adults do, and are still growing and developing.” While stainless steel items meet the recommendation to avoid plastic products in children, Ahimsa® products have the obvious advantage of not breaking like glass.

Is stainless steel better for the environment than plastic?

According to the Steel Recycling Institute, steel can be recycled over and over and over again without losing its integrity and requires less energy to recycle than to make anew. Most plastic unfortunately ends up in landfills and it is estimated to take 700 years to decompose. Our special coloring process that allows Ahimsa® products to be fully metal is environmentally friendly, so it does not produce toxic run-off into the ecosystem.

Will Ahimsa products break or peel?

No. Our steel is durable, so it won’t break or shatter with everyday use, like glass. And it won’t peel, like other colored stainless steel products you’ve seen. We use a special process that allows the colors to naturally occur in the metal.

Which Ahimsa products are best for my little one(s)?

Our products are meant to last, you can use Ahimsa at ages 1, 8 and 18! We thoughtfully design our products to be safe for little ones and our planet while reducing consumption. Once your child outgrows the Starting Solids Set  and can use regular cups and utensils, the training cup is the perfect size rinse cup in the bathroom, the infant spoon doubles as a tea stirrer and the bowl is great for snacks or as an additional compartment to our modular divided plate. Our plates are great for any age as they encourage choosing a variety of healthy foods at each meal and help visualize portion sizes easily. It’s the lasting beauty of stainless steel - grows with your child and reduces waste.
