As a busy mom and pediatrician, I understand the daily struggle of getting kids to eat their vegetables. Research shows that most children in the U.S. aren’t meeting their daily vegetable requirements. Instead, they’re consuming ultra-processed foods that are high in sugar, salt, and unhealthy fats. According to a 2021 study published in JAMA, ultra-processed foods now account for 67% of children’s calorie intake, while vegetables make up less than 10% of their daily diet.
How can we turn this around in our own kitchens? One answer is sheet pan dinners—a simple, time-saving, and fun way to get kids to enjoy a variety of vegetables. Sheet pan recipes make vegetables the star of the meal, while combining them with flavors and textures kids love.
You can transform your vibrant roasted vegetables into an engaging dinner by plating them on an Ahimsa Stainless Steel Kids’ Plate . The plate’s compartments are perfect for separating roasted veggies, protein, and dipping sauces, making it easy and fun for kids to explore each element of the meal.
Here’s how you can use sheet pan cooking to get your kids excited about eating veggies, backed by evidence and practical tips.

Studies consistently show that children in the U.S. are falling short on vegetable consumption.
These trends are concerning because vegetables are critical for kids’ growth and development. They provide fiber, vitamins, and minerals that support digestion, immunity, and brain function. Without enough vegetables, children are more likely to face health issues like obesity, constipation, and even long-term chronic diseases.
Sheet pan dinners are an easy, evidence-backed way to increase your kids’ vegetable intake. Here’s why they work:
Choose a mix of colors and textures to make the meal visually appealing and nutritionally diverse.
Prep Hack: Arrange your veggies in colorful sections on an Ahimsa Purposeful Plate before roasting. This not only keeps portions organized but also makes serving a breeze, helping you create a visually stunning presentation straight from oven to table.
Skip bland vegetables and season with flavors kids enjoy:
Once your seasoned veggies are roasted, sprinkle with grated Parmesan directly on an Ahimsa Balanced Bites Plate . The vibrant colors of the vegetables pop against the polished stainless steel, making the meal feel extra special.
Make the meal complete by serving roasted veggies with:
Serve grains like quinoa or brown rice in one section of an Ahimsa compartment plate , and roasted chickpeas or baked chicken tenders in another. Let kids mix and match flavors to build their ideal bite while keeping the meal balanced and mess-free.
Kids love dipping! Offer options like:
You can even pack hummus, marinara sauce, or yogurt ranch in an Ahimsa stainless steel container for on-the-go dipping. Perfect for busy families who want to enjoy healthy leftovers for lunch the next day!

The American Academy of Pediatrics (AAP) released a report in July 2018 suggesting ways that families can limit exposure to certain chemicals at mealtime, including “the use of alternatives to plastic, such as glass or stainless steel, when possible.” The report explained that “…some additives are put directly in foods, while “indirect” additives may include chemicals from plastic, glues, dyes, paper, cardboard”. Further, “Children are more sensitive to chemical exposures because they eat and drink more, relative to body weight, than adults do, and are still growing and developing.” While stainless steel items meet the recommendation to avoid plastic products in children, Ahimsa® products have the obvious advantage of not breaking like glass.
According to the Steel Recycling Institute, steel can be recycled over and over and over again without losing its integrity and requires less energy to recycle than to make anew. Most plastic unfortunately ends up in landfills and it is estimated to take 700 years to decompose. Our special coloring process that allows Ahimsa® products to be fully metal is environmentally friendly, so it does not produce toxic run-off into the ecosystem.
No. Our steel is durable, so it won’t break or shatter with everyday use, like glass. And it won’t peel, like other colored stainless steel products you’ve seen. We use a special process that allows the colors to naturally occur in the metal.
Our products are meant to last, you can use Ahimsa at ages 1, 8 and 18! We thoughtfully design our products to be safe for little ones and our planet while reducing consumption.
